A selection of Chardonnay grapes from nine different Premier Cru vineyards with very chalky and chalk-rich soils, all located exclusively in the municipality of Cuis. The average age of the vines is 45 years, and the grapes are selectively hand-harvested. Only the juice from the first pressing is used, and fermentation takes place spontaneously in barriques, followed by further aging on the fine lees for eight months. For the second fermentation, 30% of reserve wines from a Solera started in 1986 are used, along with 70% of wine from the current vintage. Depending on the vintage, the bottles continue to mature for an additional two to three years. The dosage is 2 to 3 grams per liter, and the total production is approximately 13,000 bottles, 300 magnums, and 50 Jeroboams.
