Kilikanoon Covenant Shiraz is harvested from premium vineyards throughout the Clare Valley, bunches are handled to develop the unique personality of each vineyard. The Kilikanoon vineyards range across all three valleys that create the unique environment and region known as the Clare Valley. With the vineyards spanning the length of the Valley, parcels were able to be harvested at opportune time as the berries developed their rich flavour profile. Crushed into stainless steel tanks, the grapes were allowed to naturally begin fermentation. Once completed, the skins were pressed, and the wine placed into new and seasoned French oak hogsheads for 14 months. Once each batch softened, a blend that shows the refinement and richness of cooler climate shiraz was compiled but selecting barrels out of each batch.
