The vineyards are situated in a cooler climate, allowing for slow ripening of the grapes and resulting in a wine that is complex and well-balanced. The winemaking process includes gentle pressing of the grapes, aging in French oak barrels for 18-24 months, and no fining or filtration before bottling.
