Purato Nero d'Avola is hails from the Trapani area in the extreme west of the island of Sicily. Given the dry growing season, the low disease pressure is low providing perfect conditions for growing organic grapes. After de-stemming, the grapes are very gently crushed after which the alcoholic fermentation begins. During the early stages of fermentation, which takes for around 15 days at a controlled temperature of approximately 22°C. Regular pumping over is carried out in order to extract deep colour and tannins. Once fermentation has finished, the wine is racked off and malolactic fermentation takes place. The resulting wine offers plummy fruit forward flavors and succulent tannins.
