Antonio Pulcini’s estate, renowned since Roman times, preserves the ancient Malvasia Puntinata (also known as Malvasia del Lazio) and Grechetto varieties, which have nearly vanished due to Trebbiano and Malvasia di Candia. Pulcini meticulously prunes his vines to yield just 20 hl/ha, ensuring concentrated fruit essential for ageworthy wines. His premier white, from the Colle Gaio vineyard, is aged in underground caves until it reaches its peak. The wine undergoes 4-5 days of skin maceration, followed by fermentation with indigenous yeasts, and rests on its fine lees until bottling in March. This meticulous process results in a highly anticipated, exceptional wine.
