WINE DESCRIPTION
Collegiata Pinot Grigio is a simple, unoaked white wine hailing from the Terre Siciliane appellation on the volcanic island of Sicily. This wine is shows the lighter, fresher façade of Pinot Grigio. The vineyard are situated on the northeast facing slopes at high elevation, which has a cooling effect, helping to retard ripening and retain acidity in the grapes. After harvest, the grapes are immediately crushed and cold fermented in stainless steel tanks to capture their freshness. The wine is bottled shortly after the fermentation and released ready to be enjoyed in its youth.
