Clos du Tue-Boeuf La Caillère Cheverny is produced by family team Thierry, Zoe and Louise Puzelat. La Caillère is made almost entirely from Pinot Noir with a dash of Gamay. The 1.35-hectare estate plot of old vine Pinot Noir is planted on very deep clay over limestone and is farmed organically. The whole clusters undergo a semi-carbonic maceration which creates aromas of kirsch and confected red fruit. The wine is aged around 10 to 12 months in used large and smaller oak barrels. The wine is bottled without filtration and with little to no sulfur.
