Château de Marsannay Bourgogne du Château is sourced from grapes near Marsannay itself. The bunches are harvested manually, followed by a manual sorting and destemming. The berries are put into thermo-regulated stainless steel vats for a cold maceration to enhance the aromatics and extract color, then fermentation ensues. Maturation occurs in oak barrels and in wooden vats for under a year before the wine is bottled.
