Château de Brousse Castillon - Côtes de Bordeaux is located in the heart of the Castillon – Côtes de Bordeaux (formerly Côtes de Castillon) appellation, which is the eastward extension of St-Emilion. Chateau de Brousse is one of the older estates in the appellation and was modernised in the 1980's by then manager Mark Dworkin of Château Larmande and Michel Rolland. The vines average 30 year old and are planted on a clay/limestone soil. Three-quarters of the Brousse vineyard (the property is about 30 ha) is on the south-facing Castillon slope, and the rest is on the plateau. The yields are kept to a low 35 hl/ha through careful pruning and the removal of excess buds in the spring. After a double sorting of the fruit and 2 days of cold maceration, fermentation occurs over a period of three weeks in stainless steel tanks at controlled temperature. The must is circulated over the cap of skins 2 times per day for the first 5 days and then once over the last 20 days. The varieties are aged in stainless steel tanks, and then assembled after 14 months.
The resulting wine is a rich, deep black-purple colored and mouthfilling wine, with generous flavors of plush, ripe, spicy black cherries and currants with notes of dark chocolate.
