WINE DESCRIPTION
Cava d'Onice Rosso di Montalcino is a structured red wine produced using the Sangiovese Grosso clone, hailing from the Montalcino appellation in Tuscany, Italy. The vineyards are planted at high elevation on clay-limestone soils that help to retain water during the warm growing season, aiding to maintain freshness and acidity in the grapes. The grapes are manually harvested and gently crushed before being transferred to cement and stainless steel vats to begin fermentation. Maturation typically takes place in a combination of Slavonian and French oak barrels for a period of around 6 months, before spending a further 6 months in bottle prior to its release.
