Castell de Santueri Tinto is produced from the indigenous Callet and Manto Negro varieties, with a touch of Cabernet Sauvignon that adds structure and black fruit flavors. The vineyards are planted on the south east of the Island of Mallorca. This Spanish island experiences a moderate Mediterranean climate, cooled by the proximity to the sea. All the bunches are manual and optically sorted to ensure only the healthiest grapes are selected. The fermentation is temperature-controlled in large stainless steel tanks, before being matured in French & American oak barrels for around 6 months.
