WINE DESCRIPTION
This 100% Sangiovese is carefully crafted from the various Crus of Castagnoli. Each year, the fruit from each parcel is analyzed to create a balanced and complex Chianti Classico that offers immediate drinkability and enjoyment. Certified organic (IT BIO 006), the wine is aged 2/3 in 5-hectoliter Tonneaux and 1/3 in Austrian and Slovenian 20-hectoliter oak barrels. Hand-harvested in small crates, the grapes undergo spontaneous alcoholic fermentation with natural yeasts in 1-ton vats and stainless steel tanks. Color and tannin extraction is done manually through punching down, pump-overs, and delestage. Malolactic fermentation takes place in oak.
