WINE DESCRIPTION
Cantina di Dolianova Caralis Chardonnay Brut is a dry, tank method sparkling wine from the Italian region of Sardinia. The grapes are harvested earlier during the growing season to retain acidity and freshness. The berries are gently pressed before being fermented at low temperatures in stainless steel vats. Once the first fermentation is complete, the base wine is sent for a second fermentation in a pressure-resistant, sealed tank (autoclave) to allow the carbon dioxide to be captured, creating a natural sparkling wine.
