The maceration period, ranging from 12 to 20 days depending on the grape variety, ensures optimal extraction of flavors and tannins. Following fermentation, the wine ages for 24 months in French oak barrels of 5hl capacity, imparting subtle oak nuances and enhancing complexity. A further 6 months in stainless steel vats and at least 6 months in bottle allow the wine to harmonize and mature.
