WINE DESCRIPTION
Cà dei Zago Col Fondo Prosecco is an unfiltered Prosecco that has undergone a second fermentation in bottle. This wine hails from the Prosecco appellation, located in the Veneto region of Northern Italy. The wine is composed mostly from the aromatic Glera with a small proportion of local varieties making up the remainder of the blend. The winemaking process involves a traditional method called "Col Fondo," where the wine undergoes a secondary fermentation in the bottle, resulting in a natural effervescence. The wine is bottled and sold with its lees (decomposing yeast) which results in a slightly cloudy, texturally complex sparkling wine.
NOTES FROM VINOVOSS SOMMELIER
Cà dei Zago Col Fondo Prosecco reveals a slightly hazy appearance on pouring, with a pale straw color. On the nose, it offers aromas of ripe orchard fruits, such as apple and pear, accompanied by floral notes of white flowers. These delicate scents are complemented by a subtle hint of yeastiness. The palate of this Prosecco is lively and refreshing, with a fine and persistent perlage that dances on the tongue. The flavors mirror the aromas, with crisp apple and pear taking center stage, followed by a touch of citrus zest that adds a zingy brightness on the moderate length finish.
