WINE DESCRIPTION
The winery places great emphasis on environmental sustainability, carefully managing soils to preserve biodiversity within its parcels. Yields are strictly controlled at 40 hl/ha to ensure the purest expression of each terroir. Harvesting is conducted exclusively by hand, allowing for the selection of overripe grapes with high sugar concentration and botrytized berries, ideal for crafting a soft and luscious wine.
Grapes are gently pressed pneumatically for 3-6 hours, with the heart of the press separated from the later juice. Following static settling, fermentation occurs in temperature-controlled stainless steel tanks. The wine matures on fine lees for several months before bottling in August, delivering elegance and depth.
