Wine Expert Note:

Bollinger R.D Extra Brut Champagne (Récemment Dégorgé) is an exceptional Champagne that showcases the expertise and craftsmanship of the Bollinger house. This particular cuvée is known for its unique aging process, as it is released only after an extended period of time on the lees, resulting in a wine of remarkable complexity and depth. On the nose, Bollinger R.D Extra Brut Champagne offers a bouquet of toasted brioche, hazelnuts, and baked apples, accompanied by delicate floral notes. The palate is rich and full-bodied, with a creamy texture and a precise balance between freshness and maturity. Flavors of ripe citrus fruits, honey, and almonds intertwine harmoniously, leading to a long and elegant finish. The Extra Brut designation indicates that this Champagne is made with minimal dosage, resulting in a drier style that allows the true character of the wine to shine through. This, combined with the extended aging on the lees, contributes to the wine's exceptional complexity and finesse. Bollinger R.D Extra Brut Champagne (Récemment Dégorgé) is a wine that can be enjoyed on its own as a special occasion aperitif or paired with a range of dishes. Its richness and depth make it a perfect match for seafood, particularly oysters or lobster, while its acidity and structure can also complement creamy cheeses or roasted poultry.
