Colore, the pinnacle of Bibi Graetz's vision, emerges from ancient Sangiovese vines in vineyards like Lamole, Vincigliata, Olmo, and Siena. The terroir, marked by poor soils with sand and stone at high altitudes, imparts a distinctive Tuscan essence. The grapes, over 70 years old, thrive in Galestro and clay. The winemaking process involves natural fermentation in open barriques, followed by a 20-month aging period, yielding Colore, a true testament to Tuscany's heritage and flavor.
