The high-altitude vineyards (4,300 ft) benefit from cool nights that temper the hot days, perfect for slowing grape maturation. Their first sparkling wines, crafted using the traditional Méthode Champenoise, debuted in 1989 to critical acclaim, putting New Mexico on the wine map.
