WINE DESCRIPTION
To make good sparkling shiraz you need to start with a good shiraz base wine. The Thomson family at Best's Great Western have long been famous for their highly regarded still Shiraz wine, particularly the Bin 0. Here Shiraz grapes from the Grampians regions are vinified into a based wine, including more than a year in oak barrels before going through the same traditional method that is used to produce Cremant and Champagne. The result is a richly black fruit, bubbly red wine where the scouring effect of the bubbles provides a great balance to the grainy tannins. Gently sweet due to dosage with liqueur muscat, this is a great winter wine that can also be cellared to develop leathery complexity. This is a benchmark example of an Australian classic.

Victoria's wine industry began due to the discovery of gold in the 1850s, leading to a influx of settlers from Europe, who brought vines and know-how from home. By 1890, Victoria was producing half of all the wine in Australia, but the spread of phylloxera in the late 19th Century and a number of wider issues, caused a decline.
