The Recioto della Valpolicella undergoes a unique process in the cellars of the Grezzana winery, with drying and fermentation interrupted at 120 g/L residual sugar. The wine matures for about 12 months in cherry wood barrels, followed by an additional 6 months of refinement in the bottle.
