"Barbadillo Manzanilla Pasada Pastora" is a distinguished sherry from the renowned Barbadillo bodega, situated in the heart of Sanlúcar de Barrameda, a key area in the Jerez region famous for its unique manzanilla production. This Manzanilla Pasada is a special category of manzanilla that has undergone extended aging, surpassing the typical maturation period, which intensifies its complexity and depth. "Pastora" is part of Barbadillo's esteemed "Solear" range, originally launched in the late 19th century, and it's named after the iconic image of the "Pastora" on its label. This wine is aged under a layer of flor yeast for around 8 to 9 years, longer than standard manzanilla, in a process that occurs in the bodega's historic solera system. This extended aging in the humid, maritime climate of Sanlúcar imbues the wine with a distinctive character, blending the freshness of manzanilla with the nuanced complexity of a pasada style.
