WINE DESCRIPTION
José Manuel Rodríguez, a distinguished oenologist, crafts the Arínzano La Casona blend, meticulously combining Tempranillo and Merlot grapes. Harvesting involves precise bunch selection and qualitative destemming using the oscillys system followed by individual berry selection, all transported in small 12 kg boxes. The grapes are vatted uncrushed, with pre-fermentation cold maceration set between 8-12ºC to enhance flavor extraction. The fermentation process spans 15-20 days, employing daily pump-overs and a minimum of two delestages, designed to intensify extraction and build a robust structure suitable for extensive aging, resulting in a wine of exceptional depth and complexity.
