This wine is crafted from old Pinot Gris vines. The vineyard maximizes sun exposure and precise shoot positioning, leading to richer flavors and aromas. Higher yields enhance acidity, minimize sugars, and extend hang time, preserving its minerality and acidity. The grapes are handpicked before sunrise, gently destemmed, and the juice is left in contact with the skins for 72 hours before pressing. Natural fermentation and malolactic conversion occur in 100% neutral French oak barrels, while an 8-month lees rest builds texture and flavor. The result is an exquisite, bone-dry Pinot Gris. Its production is very limited, with only about 320 cases per year.
