The magic unfolds during a 9-month slumber in California Clay Amphorae (Novums), guided by native yeast and absent of sulfites or additions. Bottled under descending moons, this vibrant elixir, boasting 11.4% alc., is a living testament to its terroir, with 210 cases produced.
