WINE DESCRIPTION
Crafted from 100% Xinomavro grapes, this wine is a true reflection of the Amyndeon plateau's distinctive terroir. Nestled in the Amyndeon viticulture zone within North-western Macedonia, specifically the "Hedgehog" sub-region, the 69 hectares of privately owned vineyards thrive at altitudes ranging from 620 to 710 meters. With a north-facing exposure towards Lake Petron and Mount Voras, the grapes benefit from a unique microclimate. The winemaking process involves careful destemming, cold soaking with skin contact, and gradual temperature-controlled alcoholic fermentation. The wine matures for twelve months in French oak barrels, followed by an additional twelve months in the bottle, resulting in a harmonious and expressive Xinomavro.

This wine presents a vibrant purple-red hue and reveals a complex aroma showcasing small berries, red fruits, leather, and a medley of spices such as vanilla, pepper, and clove.Ripe blackberry notes add depth to the bouquet. The palate is full-bodied with rounded tannins, balanced acidity, and seamlessly integrated wood tones. A lengthy aftertaste unfolds, leaving an intense quince aroma. Pair this wine harmoniously with juicy red barbecued meats, spicy sausages, red baked peppers in olive oil, stewed rabbit, or light, spicy full-bodied cheeses. Best enjoyed at a temperature between 16-18°C (60.8-64.4°F).
