The key feature of this wine is its unique vinification process. It's made from 100% Vernaccia Nera grapes, of which 60% are dried in special ventilated rooms to concentrate their flavors. The wine undergoes a triple fermentation process, known as the Charmat lungo method. Initially, a portion of the harvest is fermented immediately. Then, after three months, the dried grape must is added to the base wine for a second fermentation, intensifying the wine's aromatic complexity. Finally, a third fermentation is conducted to create the effervescent bubbles.
