Clerget owns nearly half a hectare of vines in Morey-Saint-Denis, Les Crais lieu dit, dividing it equally between red and white grapes. Planted in 1983, 90% Chardonnay, 5% Pinot Blanc, and 5% Pinot Meunier replaced the previous Pinot Noir vines in 2003. The soil analysis revealed a whiter soil suited to Chardonnay, leading to the replanting decision. Christian harvests all white grapes together, ferments with indigenous yeasts, and transfers the young wine to barrels (20% new) for 12 months. Malolactic fermentation occurs in Spring, without lees stirring, preserving the wine's vivacity. After barrel assembly, the wine spends the next six months in tanks.
