In 1990, a new winery and underground barrel cellar were built, utilizing gravity-fed winemaking. Gérard carefully balances oak use, aging about a third of Vaudésir in barrels for 12 to 14 months. His son, Vincent, is now beginning to take over winemaking responsibilities.
