Pressing is done by taste, halting at just over one bar of pressure to avoid excessive phenolics. With a cool fermentation between 52° to 55°F over four weeks, the balance is carefully calibrated before the wine undergoes cold stabilization and bottling under screwcap for the first time in 2017.
