Philippe Collin, originally from Champagne, relocated to Limoux in 1980 to establish his domaine. Despite his family's Champagne-making legacy, he faced limited opportunities in the expensive Champagne region. Driven by terroir knowledge and technical expertise, he ventured to the more affordable South of France. Limoux provided a unique chance due to its cost-effective vineyard land and an ideal microclimate for white and sparkling wine production. Located inland from the Mediterranean, Limoux boasts a cool climate, making it the Languedoc's coolest area. Records show sparkling wine production here as early as 1531. Philippe prioritizing quality over quantity, planted traditional Champagne grapes: Pinot Noir and Chardonnay, along with Chenin Blanc for balance in this climate.

Château Moncontour, an iconic 15th-century structure commissioned by Charles VII, is located in the heart of Vouvray, perched high above the Loire River. Surgeon Christian Feray fulfilled a childhood dream when he purchased the Château in 1994, elevating Moncontour in the Vouvray renaissance. Château Moncontour boasts 130 hectares of vineyards.
