Silvaner's pale green-yellow colour is one of its defining features. It has delicate aromas of white flowers and hay, with a medium to light body and rather high acidity. On the palate, it has notes of citrus and stone fruit, with a hint of spice and a long mineral finish.
Silvaner is widely grown in Germany, particularly in the regions of Franconia, Rheinhessen and Baden. It is also grown in Austria, Switzerland, Hungary and the Czech Republic. Silvaner is a hardy variety that prefers cool climates and is relatively easy to cultivate although it buds relatively early and is therefore susceptible to spring frosts. It is susceptible to powdery mildew and downy mildew, so it needs to be treated with care. It ripens late and is usually harvested in September. Silvaner wines from Germany can vary in style. In Franconia and Rheinhessen, Silvaner is usually dry and medium bodied with a mineral character and high acidity. The best examples come from the shell limestone soils in the Franconia region. Silvaner pairs well with a variety of dishes, from salads and seafood to pork and poultry. It is also a great choice for enjoying on its own.
