Kharistvala Shavi, also known as Bull's Eye Red, is a rare red grape variety native to the Meskheti region in Georgia. The grape is cultivated in the Samtskhe-Javakheti area, where it has been traditionally grown for centuries. This variety is known for its large, dark berries, which are thick-skinned and produce deep, flavorful wines. Despite being highly productive, Kharistvala Shavi is sensitive to fungal diseases, particularly powdery mildew and downy mildew. It is most commonly used to produce table wines but can also be found in blends.

The wines from Kharistvala Shavi are aromatic and rich, with notes of fresh red fruits, wild cherry, and berry juice. The wine’s flavor profile is further enhanced with hints of dried wild herbs, giving it a distinct earthy character. The wine is full-bodied with a good balance of acidity and tannins.

REGIONAL FEATURES

Grown primarily in the Samtskhe-Javakheti region of Georgia, Kharistvala Shavi is a part of the historical grape varieties of Meskheti. It thrives in the mountainous, forested areas near the Turkish border. Despite the historical challenges faced by the region, including destruction of vineyards during the Ottoman occupation, Kharistvala Shavi has survived as a local specialty.
