It is mainly used in small quantities in blends, often contributing up to 15% of wines like those made by Gavalas Winery. While its role is minor, it adds aromatic complexity to the final wine, which is typically dry with good acidity.

Gaidouria wines are dry, with aromas of sweet lemon and honey. The wine has moderate acidity and a light tannin flavor, providing a smooth, balanced mouthfeel.

Gaidouria is primarily grown on the island of Santorini, in small quantities. It also has a presence in Turkey's Urla region. It is an early-maturing variety that is resistant to vine diseases, though it tends to produce low yields.

The name 'Gaidouria' translates to 'donkey' in Greek, possibly due to the animal's supposed preference for the grapevine's leaves.

Gaidouria is closely related to Assyrtiko, according to DNA analysis conducted in 2011.
