Aidani is a low-yielding variety, and is best grown in sandy and volcanic soils. The grapes require a long growing season to reach optimum ripeness. The wines are typically aged in stainless steel tanks, but can also be aged in oak barrels. In Santorini, Aidani wines tend to be light and fresh, with a lemony character and a hint of minerality. In Crete, the wines are more full-bodied and intense, with notes of citrus, honey and herbs. Aidani pairs well with seafood, grilled vegetables and salads.
